Shredded Good

Hello my friends!

Happy fuhh-reaky Friday!! :) Big smiles all around!

Yesterday I had a little date in the morning...

With this guy:


After my run, I was in the mood for some quick ab work.  I joined one of the most annoying (IMO) DVD instructors on earth, Tony, to burn off some "goo."


This program is only 15 minutes long, but you get in over 300 cruch-type moves. Yowzas!

That thought kind of brings me back to my high school days, when I would have killed for Britney Spears's (I'm a Slave for You era) abs. I remember hearing that she did something like 350 crunches a day. I didn't think that was possible...until I was introduced to P90X's Ab Ripper X.

Afterwards, I was beat, and my abs didn't just feel ripped, they felt shredded!


Youuuchie.

I love a good living room workout from time to time.  I don't do it too often, because right now our living room is about 8 steps wide, but every once in a while I'll pop in one of Justin's P90X dvds or turn on Kendra's Booty Blasting workout. 


Doesn't get much better than some booty shakin with Miss Kendra! Love her! :) 

So last night, I dug into my barrel of tricks, and pulled out another delicious Crock Pot recipe for dinner.  Again, I love Crock Pot recipes for week nights because of the set it and forget it aspect, but this one can also be great for a weekend night-in. 

Jessica's Crock Pot BBQ Shredded Pork: 

What you'll need...


A Crock Pot (duhhhh!)
1 14.5 ounce can of fat free, low sodium beef broth
1 tsp. minced garlic
2/3 cup of BBQ sauce (your choice!) 
1.5 pound pork roast

Yep, that's it! This one is so easy peasy. 

What you do... 

Step #1: Trim any unwanted fat off of your pork roast and set it aside.

Step #2: Spoon 1 tsp. of minced garlic into the bottom of your Crock Pot.

Step #3: Pour the entire can of beef broth into the pot. 

Step #4: Put the roast down into the middle of the pot. 

Step #5: Spread all of the BBQ sauce on top of the roast in the pot. 

I love Sweet Baby Ray's Honey Chipotle BBQ sauce: 


The sauce is the boss! 


So now you should be here. 

Step #6: Cover your Crock Pot, and turn the heat onto "low." 

Step #7: You know the drill --> set it & forget it! :)  Let it cook on low for 6 to 8 hours. 


Be good Crock Pot! 

You can go to work, or go out and run errands all day, with this pot-o-joy cooking at home! 

Step #8: When you're ready to eat, just pull the roast out of the pot and place it onto a cutting board.  Then you can shred up the meat to your heart's content with 2 forks, like so: 


Shred 'er up! :) 

Step #9: Spoon the meat onto whole wheat buns or sandwich thins, drizzle a little more BBQ sauce on top (but don't forget the condiment control!!). 

Last night, I served our sandwiches with some of our favorite Alexia's

And with some roasted carrots: 


{Baby carrots sprinkled with garlic salt, cinnamon, and a little brown sugar & popped in the oven @ 400 degrees for 20 to 30 minutes.}

We had a bit of a DISASTER with the carrots last night. I reached in to pull them out to sprinkle on the brown sugar, and somehow my oven mitt was slightly damp, so all of the heat from the pan came through and burned the H-E-double-hockey-sticks out of my finger! Holy baaaa-gezze it hurt so bad! 

I was pretty much incapacitated for the rest of the night and parked myself on the couch to nurse my poor finger:

But trust me, it was finger licking good! I even had a little extra meat on the side, so I didn't have to get up from my nursing station! ;) 

This would be a great meal to serve with that strawberry shortcake at an upcoming BBQ!  Or, perhaps, for watching the Bulls playoff game tomorrow night?! Sounds like a great idea to me! 

I am really excited because after work today we are headed down to IU to meet up with Ashley & Tyler for Little 5 weekend (the biggest party weekend of the year at IU!).
